Bison, more commonly called "buffalo".....the original "red meat".
It is estimated in 1830 that 30 to 70 million buffalo roamed The Plains. The Native Americans only killed what they needed, and they did not waste anything from this miraculous animal. They ate the delicious meat, they used their hides for blankets, clothes, and tipis, their horns were used for cups or spoons, small bones were used for making knives and tools, the brains were used for tanning hides, the hooves were used to make glue, the gallstones were used to make yellow paint, the sinew was used for sewing and bowstrings, the tails were used for "shooing" flies, and the dung was even used for fires. The skulls were also used in ceremonies by the Indians.
It seemed that the supply of bison was endless....until the unnecessary slaughter of millions of these amazing creatures in the mid to late 1800's. Unregulated killing reduced the herds to 550 to 1,500 of these wonderful animals. In 1902, our federal government started the first conservation project in Yellowstone National Park in order to save the buffalo.
From the very first time my husband and I saw a buffalo, we dreamed of owning a small herd. Then after tasting a buffalo burger, we were truly convinced that this was a noble undertaking for both the right historical and preservation reasons as well as for the culinary taste and nutritional reasons. Our friends, neighbors, and customers agree that once you try buffalo meat, you WILL BE HOOKED! And, this is one of the truly good addictions to have! Buffalo meat is extremely lean meat and is therefore, very low-fat. There is only 2.42 g of fat in a serving of bison, as compared to 10.15 g in choice beef, 9.66 g in pork, 7.41 g in skinless chicken, and 10.97 g even in sockeye salmon.
We have now raised a small herd of buffalo for the last 7 years here at Coyote Creek Farm and continue to learn from and grow respect for this massive mammal.
Buffalo is one of the most delicious & nutritious meats, but so many people are apprehensive to try it. However, after serving loads of customers, we have never found one that did not like it! We urge you to view our buffalo here at Coyote Creek Farm with awe and wonder, but on the flip side, don't be afraid to try a culinary treat with bison meat. It is a great natural, God-given food that supported the American Indians for generations.
Coyote Creek Farm offers ground bison, patties, stew meat, cube steak, roasts, sirloin, ribeye, or NY strip steak as well as fillets. Currently, the orders must be picked up or locally delivered.
